🍽️ Small Apple Tarts

Ingredients
- 150 g flour
- 1 pinch salt
- 50 g sugar
- 1 egg
- 100 g butter
- 2 tart, large apples (e.g. Granny Smith)
- lemon juice
- 200 g low-fat quark
- 2 eggs
- 100 ml whipping cream
- 2 packets vanilla sugar
- 1 red-skinned apple
- mint (for garnish)
Instructions
- 1. Mix flour, salt, and sugar in a bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Place the egg in the well.
- 4. Distribute the butter in small pieces around the egg.
- 5. Knead all ingredients quickly into a smooth dough.
- 6. Shape the dough into a ball.
- 7. Wrap the dough ball in cling film.
- 8. Store the dough in the refrigerator for 30 minutes.
- 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 10. Peel all apples except the red apple.
- 11. Quarter the peeled apples.
- 12. Remove the core from the apple quarters.
- 13. Slice the apple pieces crosswise into thin slices.
- 14. Mix the apple slices immediately with a little lemon juice.
- 15. Whisk the quark with the eggs.
- 16. Stir the cream into the quark mixture.
- 17. Add the vanilla sugar to the quark mixture and mix well.
- 18. Dust the work surface with flour.
- 19. Roll out the dough thinly.
- 20. Cut out four circles, each about 10 centimeters in diameter.
- 21. Grease small tartlet molds with butter.
- 22. Place the dough circles into the molds.
- 23. Distribute the apple slices on the dough.
- 24. Pour the quark mixture over the apples.
- 25. Bake the tarts for 25 to 30 minutes in the oven.
- 26. Remove the tarts from the oven.
- 27. Let the tarts cool down completely.
- 28. Wash the red apple.
- 29. Dry the red apple.
- 30. Remove the core of the red apple.
- 31. Slice the red apple into paper-thin slices.
- 32. Mix the red apple slices immediately with lemon juice.
- 33. Decoratively arrange the red apple slices on the tarts.
- 34. Garnish the tarts with mint.
- 35. Serve the tarts.
