🍰 Mini Yorkshire Puddings with Beef Steak and Caramelized Onions

Ingredients
- 150 ml Milk
- 1 Egg
- 1 Egg Yolk
- 80 g Flour
- 250 g Sirloin Steak
- 70 ml Vegetable Oil
- 1 Handful Arugula
Instructions
- 1. Peel the onions and slice them into thin strips.
- 2. Heat the butter in a pot and let it turn slightly brown.
- 3. Add the onions, sugar, salt, and pepper, and stir everything well.
- 4. Reduce the heat and let the onions simmer on low for about 20 minutes, stirring occasionally.
- 5. Pour in the vinegar and wine, and simmer the mixture for another 20 minutes uncovered on low heat.
- 6. Finally, season the onion sauce with salt and pepper to taste.
- 7. Transfer the sauce to a container, let it cool, and set it aside.
- 8. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 9. Whisk the milk, egg, egg yolk, and flour in a bowl until you have a smooth batter.
- 10. Let the batter rest for about 10 minutes to allow the flour to absorb the liquid.
- 11. Rinse the meat under cold water and pat it dry with kitchen paper.
- 12. Heat one tablespoon of oil in a hot pan.
- 13. Sear the steak for 2 to 5 minutes on each side.
- 14. Wrap the meat in foil and let it rest for about 15 minutes.
- 15. Brush the indentations of 24 mini-muffin tins with oil.
- 16. Place the tray in the hot oven for about 5 minutes until the oil is sizzling.
- 17. Quickly fill each tin about two-thirds full with the batter.
- 18. Bake the puddings for approx. 20 minutes until golden brown and puffed up.
- 19. Slice the rested steak into 24 thin strips.
- 20. Wash the arugula and shake it dry.
- 21. Fill the finished puddings immediately with the meat strips and the onion sauce.
- 22. Garnish the puddings with the arugula and serve immediately.
