  1. 1. Peel the onions and slice them into thin strips.
  2. 2. Heat the butter in a pot and let it turn slightly brown.
  3. 3. Add the onions, sugar, salt, and pepper, and stir everything well.
  4. 4. Reduce the heat and let the onions simmer on low for about 20 minutes, stirring occasionally.
  5. 5. Pour in the vinegar and wine, and simmer the mixture for another 20 minutes uncovered on low heat.
  6. 6. Finally, season the onion sauce with salt and pepper to taste.
  7. 7. Transfer the sauce to a container, let it cool, and set it aside.
  8. 8. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  9. 9. Whisk the milk, egg, egg yolk, and flour in a bowl until you have a smooth batter.
  10. 10. Let the batter rest for about 10 minutes to allow the flour to absorb the liquid.
  11. 11. Rinse the meat under cold water and pat it dry with kitchen paper.
  12. 12. Heat one tablespoon of oil in a hot pan.
  13. 13. Sear the steak for 2 to 5 minutes on each side.
  14. 14. Wrap the meat in foil and let it rest for about 15 minutes.
  15. 15. Brush the indentations of 24 mini-muffin tins with oil.
  16. 16. Place the tray in the hot oven for about 5 minutes until the oil is sizzling.
  17. 17. Quickly fill each tin about two-thirds full with the batter.
  18. 18. Bake the puddings for approx. 20 minutes until golden brown and puffed up.
  19. 19. Slice the rested steak into 24 thin strips.
  20. 20. Wash the arugula and shake it dry.
  21. 21. Fill the finished puddings immediately with the meat strips and the onion sauce.
  22. 22. Garnish the puddings with the arugula and serve immediately.
