🍽️ Mini Spinat Pizzas with Quail Egg

Ingredients
- 125 g Quark
- 1 pinch Salt
- 2 tbsp Olive oil
- 1 Egg
- 1 Egg yolk
- 200 g Flour
- 1.5 tsp Baking powder
- 600 g Spinach
- 1 Onion
- 3 Garlic cloves
- 2 tbsp Butter
- Salt
- Pepper (from the mill)
- 1 ball Mozzarella
- 8 Quail eggs
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Set the heating mode to top and bottom heat.
- 3. Place the quark in a bowl.
- 4. Add salt, oil, one whole egg, the egg yolk, flour, and baking powder.
- 5. Stir the ingredients until a smooth dough forms.
- 6. Cover the bowl.
- 7. Place the dough in the refrigerator for 30 minutes.
- 8. Wash the spinach thoroughly.
- 9. Remove any damaged leaves.
- 10. Place the spinach in a pot.
- 11. Squeeze the spinach in the pot until it wilts.
- 12. Pour the spinach into a sieve.
- 13. Press the spinach dry.
- 14. Chop the spinach finely.
- 15. Peel the onion.
- 16. Dice the onion.
- 17. Heat butter in a pan.
- 18. Sauté the onion cubes in the hot butter until translucent.
- 19. Press the garlic into the pan.
- 20. Add the chopped spinach.
- 21. Season the mixture with salt, pepper, and nutmeg.
- 22. Simmer everything for a few minutes.
- 23. Remove the pan from the heat.
- 24. Let the filling drain.
- 25. Let the filling cool down.
- 26. Drain the mozzarella.
- 27. Dice the mozzarella into small cubes.
- 28. Sprinkle some flour on the work surface.
- 29. Take the dough out of the refrigerator.
- 30. Knead the dough on the floured surface.
- 31. Divide the dough into 8 equal pieces.
- 32. Shape the pieces into small pizza bases.
- 33. Grease a baking sheet.
- 34. Place the pizza bases on the sheet.
- 35. Slightly press up the edges of the pizza bases.
- 36. Distribute the spinach on the pizzas.
- 37. Distribute the mozzarella on the pizzas.
- 38. Press a small indentation into the center of each pizza.
- 39. Beat the quail eggs.
- 40. Place one beaten quail egg into the indentation of each pizza.
- 41. Place the baking sheet in the preheated oven.
- 42. Bake the pizzas for about 20 to 25 minutes.
