🍽️ Tiny Russian Pancakes with Smoked Salmon and Sour Cream

Ingredients
- 2 egg whites
- 150 g buckwheat flour
- 150 g flour
- 1 pinch salt
- 0.5 cube fresh yeast
- 450 ml lukewarm milk
- 2 tbsp liquid butter
- ghee (for frying)
- caviar (to taste)
- 200 g smoked salmon (sliced)
- 200 g sour cream
Instructions
- 1. Separate the eggs by dividing the yolk from the white.
- 2. Mix both types of flour in a bowl.
- 3. Dissolve the yeast in the milk.
- 4. Add the melted butter and salt to the milk-yeast mixture.
- 5. Stir everything into the flour until a smooth dough forms.
- 6. Cover the bowl and let the dough rise in a warm place.
- 7. Whip the egg whites until they form stiff peaks.
- 8. Gently fold the whipped egg whites into the finished dough.
- 9. Heat some butter in a frying pan.
- 10. Place a spoonful of dough into the pan.
- 11. Gently press the dough patty flat.
- 12. Fry the pancakes until golden brown on both sides.
- 13. Serve the pancakes garnished with caviar, smoked salmon, and sour cream.
