🍽️ Mini Pizzas with Crispy Chicken and Sweet-Tart Cranberries

Ingredients
- 250 g flour
- 20 g fresh yeast
- 1 pinch salt
- 1 tbsp olive oil
- 100 ml lukewarm water
- 2 chicken breast fillets (approx. 140 g each)

- 5 tbsp olive oil
- 100 g fresh cranberries
- 2 tbsp sugar
- 1 red onion
- 2 spring onions
- 60 g turkey bacon (in slices)
- 100 g grated cheddar
- 50 ml olive oil
Instructions
- 1. Combine flour, yeast, salt, and olive oil in a bowl.
- 2. Add about 100 milliliters of water and knead everything into a smooth dough.
- 3. Cover the dough and let it rise in a warm place for about 45 minutes.
- 4. Wash the chicken breasts and pat them dry with kitchen paper.
- 5. Season the meat with salt and pepper.
- 6. Heat one tablespoon of oil in a frying pan.
- 7. Fry the chicken over medium heat for about 8 minutes until golden brown.
- 8. Turn the meat occasionally to ensure even cooking.
- 9. Remove the pan from the heat and let the meat cool down.
- 10. Slice the cooled chicken into thin slices.
- 11. Divide the dough into 8 equal pieces.
- 12. Shape each piece into a ball.
- 13. Let the dough balls rise for another 15 minutes.
- 14. Preheat the oven to 220 degrees Celsius fan mode.
- 15. Wash the cranberries and let them drain well.
- 16. Put sugar and 2 tablespoons of water into a saucepan.
- 17. Caramelize the sugar while stirring.
- 18. Stir the cranberries into the caramel.
- 19. Spread the cranberries out on a baking sheet lined with baking paper.
- 20. Let the cranberries cool down completely.
- 21. Peel the onion and dice it into small cubes.
- 22. Wash the spring onions and remove the tough ends.
- 23. Slice the spring onions into thin rings.
- 24. Roll out the dough balls round and flat.
- 25. The dough rounds should be about 18 centimeters in diameter.
- 26. Place the dough rounds side by side on a baking sheet lined with baking paper.
- 27. Distribute the chicken slices over the dough.
- 28. Leave a small border free around the edge of the dough.
- 29. Cut the bacon into thick strips.
- 30. Distribute the cranberries, onions, spring onions, bacon, and cheddar cheese over the pizzas.
- 31. Drizzle the pizzas with the remaining olive oil.
- 32. Season everything again with pepper.
- 33. Bake the pizzas in the oven for about 20 minutes until golden brown.
