  1. 1. Crumble the yeast into a bowl.
  2. 2. Stir the yeast smoothly with the sugar and 200 ml of lukewarm water.
  3. 3. Add the flour, 4 tbsp olive oil, and 1 tsp salt.
  4. 4. Knead everything into a smooth dough.
  5. 5. Adjust the amount of flour if necessary.
  6. 6. Let the dough rise, covered, in a warm place for about 1 hour.
  7. 7. Preheat the oven to 200°C fan-forced.
  8. 8. Divide the dough into 12 small portions.
  9. 9. Roll the portions into thin flatbreads on a floured work surface.
  10. 10. Place the flatbreads on baking sheets lined with baking paper.
  11. 11. Brush half of the flatbreads with olive oil.
  12. 12. Mix the tomatoes with the pressed garlic clove and the oregano.
  13. 13. Season the tomato mixture with salt and pepper.
  14. 14. Spread the tomato mixture on the remaining small pizzas.
  15. 15. Leave a narrow border free.
  16. 16. Clean the mushrooms and slice them.
  17. 17. Let the cheese drain well.
  18. 18. Dice the cheese into small cubes.
  19. 19. Distribute the mushrooms and cheese on the pizzas.
  20. 20. Bake everything together in the oven for 15-20 minutes until golden brown.
  21. 21. Bake the lids for a slightly shorter time if necessary.
  22. 22. Wash the arugula.
  23. 23. Clean the arugula.
  24. 24. Spin the arugula dry.
  25. 25. Tear the arugula into smaller pieces if needed.
  26. 26. Take the pizzas out of the oven.
  27. 27. Top the pizzas with the arugula.
  28. 28. Place a lid on each one.
  29. 29. Serve the mini pizza burgers.
