  1. 1. Mix the flour with the sugar and a pinch of salt in a bowl.
  2. 2. Distribute the butter in small pieces over the flour mixture.
  3. 3. Rub the butter into the mixture with your fingers until it resembles wet sand.
  4. 4. Add the egg and 2 to 3 tablespoons of cold water.
  5. 5. Knead the ingredients quickly into a smooth dough.
  6. 6. Shape the dough into a ball.
  7. 7. Wrap the dough ball in cling film.
  8. 8. Place the dough in the refrigerator for about 1 hour to chill.
  9. 9. Wash the plums under running water.
  10. 10. Halve the plums and carefully remove the pits.
  11. 11. Wash the mint as well.
  12. 12. Pluck the mint leaves from the stems.
  13. 13. Finely chop the mint leaves.
  14. 14. Whisk the cream, powdered sugar, almonds, chopped mint, and the remaining egg together in a separate bowl.
  15. 15. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  16. 16. Grease 6 to 8 small tart molds with a diameter of about 8 cm.
  17. 17. Divide the dough into four equal parts.
  18. 18. Dust the work surface with a little flour.
  19. 19. Roll out each dough part slightly larger than the molds.
  20. 20. Place the rolled-out dough bases into the molds and press them in.
  21. 21. Distribute the halved plums evenly in the tart molds.
  22. 22. Pour the cream-mint mixture over the plums.
  23. 23. Bake the tarts in the preheated oven for 25 to 30 minutes.
  24. 24. Sprinkle the tarts with sesame seeds in the last 5 to 10 minutes of baking time.
