🍰 Small Plum Cakes

Ingredients
- 500 g plums
- 5 mint sprigs
- 200 ml whipping cream
- 50 g powdered sugar
- 50 g ground almond kernels
- 1 egg
- 4 tsp sesame seeds
Instructions
- 1. Mix the flour with the sugar and a pinch of salt in a bowl.
- 2. Distribute the butter in small pieces over the flour mixture.
- 3. Rub the butter into the mixture with your fingers until it resembles wet sand.
- 4. Add the egg and 2 to 3 tablespoons of cold water.
- 5. Knead the ingredients quickly into a smooth dough.
- 6. Shape the dough into a ball.
- 7. Wrap the dough ball in cling film.
- 8. Place the dough in the refrigerator for about 1 hour to chill.
- 9. Wash the plums under running water.
- 10. Halve the plums and carefully remove the pits.
- 11. Wash the mint as well.
- 12. Pluck the mint leaves from the stems.
- 13. Finely chop the mint leaves.
- 14. Whisk the cream, powdered sugar, almonds, chopped mint, and the remaining egg together in a separate bowl.
- 15. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 16. Grease 6 to 8 small tart molds with a diameter of about 8 cm.
- 17. Divide the dough into four equal parts.
- 18. Dust the work surface with a little flour.
- 19. Roll out each dough part slightly larger than the molds.
- 20. Place the rolled-out dough bases into the molds and press them in.
- 21. Distribute the halved plums evenly in the tart molds.
- 22. Pour the cream-mint mixture over the plums.
- 23. Bake the tarts in the preheated oven for 25 to 30 minutes.
- 24. Sprinkle the tarts with sesame seeds in the last 5 to 10 minutes of baking time.
