🍽️ Small Panettone

Ingredients
- 300 g flour
- 2 tbsp sugar
- 0.5 cube fresh yeast (21 g)
- 125 ml milk
- 60 g butter
- 2 eggs
- Nutmeg
- Salt
- 2 tsp lemon zest
- 3 tbsp currants
- flour (for the work surface)
- butter (for the molds)
- 6 molds (10-12 cm ⌀)
Instructions
- 1. Stir the yeast smoothly into the milk. Mix flour, sugar, butter, eggs, currants, a pinch of nutmeg, salt, and lemon zest. Add the yeast milk and knead everything well with the dough hooks of the electric mixer. Let the dough rise in a warm place, covered, for 30 minutes.
- 2. Knead the dough again on a floured work surface. Form 6 equal-sized balls and fill them into the greased molds. Let the dough rise, covered, for another 20 minutes. Preheat the oven to 180 degrees.
- 3. Bake the panettone in the oven (center) for 20 to 30 minutes. Let them cool briefly and then turn them out of the molds. They taste best when fresh.
