🍽️ Mini Pizzas with Lentils and Feta

Ingredients
- 1 cube fresh yeast (42 g)
- 500 g wheat flour Type 1050
- 2 tbsp wheat flour Type 1050 (for the work surface)
- 1 tsp salt
- 50 ml olive oil
- 80 g red lentils
- 300 ml vegetable broth
- 150 g feta
- 1 zucchini
- 150 g cherry tomatoes
- 1 red onion
- 8 tbsp puréed tomatoes
- pepper
- 2 sprigs oregano
Instructions
- 1. Stir the yeast into 250 milliliters of lukewarm water in a small bowl.
- 2. Mix the flour with the salt and pour the mixture into a large bowl.
- 3. Make a well in the center of the flour mixture.
- 4. Pour the yeast water and the oil into the well.
- 5. Knead all ingredients with your hands or an electric mixer hook until you have a smooth dough.
- 6. If the dough is too sticky, knein in a little more flour.
- 7. If the dough is too dry, add a little lukewarm water.
- 8. Knead the dough vigorously on a lightly floured surface for about 10 minutes.
- 9. Place the dough back into the bowl.
- 10. Cover the bowl and let the dough rise in a warm place for 1 hour.
- 11. Rinse the lentils under cold water.
- 12. Cook the lentils in boiling vegetable broth for about 10 minutes.
- 13. Drain the lentils and rinse them with cold water to stop the cooking process.
- 14. Let the lentils drain well.
- 15. Crumble the feta cheese into small pieces with your hands.
- 16. Wash the zucchini and slice it into 0.5 centimeter thick rounds.
- 17. Wash the tomatoes and cut them in half.
- 18. Peel the onion and slice it into thin rings.
- 19. Knead the risen dough briefly once more.
- 20. Divide the dough into 16 equal portions.
- 21. Roll each portion into a small round.
- 22. Place the dough rounds on a baking sheet lined with baking paper.
- 23. Spread each dough round with puréed tomatoes.
- 24. Season the tomato sauce with salt and pepper.
- 25. Distribute the zucchini slices and tomato halves over the pizzas.
- 26. Sprinkle the onion rings, lentils, and feta over the toppings.
- 27. Drizzle the pizzas lightly with olive oil.
- 28. Preheat the oven to 200 degrees Celsius (180 degrees Celsius with fan or gas mark 3).
- 29. Bake the pizzas in the preheated oven for about 20 to 25 minutes.
- 30. Remove the finished pizzas from the oven.
- 31. Serve the pizzas on plates.
- 32. Garnish them with fresh oregano leaves.
