  1. 1. Stir the yeast into 250 milliliters of lukewarm water in a small bowl.
  2. 2. Mix the flour with the salt and pour the mixture into a large bowl.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Pour the yeast water and the oil into the well.
  5. 5. Knead all ingredients with your hands or an electric mixer hook until you have a smooth dough.
  6. 6. If the dough is too sticky, knein in a little more flour.
  7. 7. If the dough is too dry, add a little lukewarm water.
  8. 8. Knead the dough vigorously on a lightly floured surface for about 10 minutes.
  9. 9. Place the dough back into the bowl.
  10. 10. Cover the bowl and let the dough rise in a warm place for 1 hour.
  11. 11. Rinse the lentils under cold water.
  12. 12. Cook the lentils in boiling vegetable broth for about 10 minutes.
  13. 13. Drain the lentils and rinse them with cold water to stop the cooking process.
  14. 14. Let the lentils drain well.
  15. 15. Crumble the feta cheese into small pieces with your hands.
  16. 16. Wash the zucchini and slice it into 0.5 centimeter thick rounds.
  17. 17. Wash the tomatoes and cut them in half.
  18. 18. Peel the onion and slice it into thin rings.
  19. 19. Knead the risen dough briefly once more.
  20. 20. Divide the dough into 16 equal portions.
  21. 21. Roll each portion into a small round.
  22. 22. Place the dough rounds on a baking sheet lined with baking paper.
  23. 23. Spread each dough round with puréed tomatoes.
  24. 24. Season the tomato sauce with salt and pepper.
  25. 25. Distribute the zucchini slices and tomato halves over the pizzas.
  26. 26. Sprinkle the onion rings, lentils, and feta over the toppings.
  27. 27. Drizzle the pizzas lightly with olive oil.
  28. 28. Preheat the oven to 200 degrees Celsius (180 degrees Celsius with fan or gas mark 3).
  29. 29. Bake the pizzas in the preheated oven for about 20 to 25 minutes.
  30. 30. Remove the finished pizzas from the oven.
  31. 31. Serve the pizzas on plates.
  32. 32. Garnish them with fresh oregano leaves.
