🍽️ Small pies filled with carrots and minced meat

Ingredients
- 200 g flour
- 1 pinch salt
- 1 egg
- 140 g butter
- 120 g carrots
- 1 onion
- 120 g mixed minced meat
- 1 tbsp vegetable oil
- 1 egg white
- 3 tbsp whipping cream
- pepper (from the mill)
- flour (for the work surface)

- 1 egg yolk
Instructions
- 1. Mix the flour with the salt.
- 2. Mound the flour mixture on a clean work surface.
- 3. Press a well into the center of the flour mound.
- 4. Crack the egg directly into this well.
- 5. Distribute the butter in small pieces around the well.
- 6. Chop all ingredients roughly with a knife until a crumbly mass forms.
- 7. Quickly work the crumbs with your hands into a smooth dough.
- 8. Shape the dough into a ball.
- 9. Wrap the dough ball in cling film.
- 10. Store the dough in the refrigerator for 1 hour.
- 11. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 12. Peel the carrots.
- 13. Peel the onions.
- 14. Cut the carrots into small cubes.
- 15. Cut the onions into small cubes.
- 16. Heat the oil in a frying pan.
- 17. Fry the minced meat in the pan until crumbly.
- 18. Add the carrot and onion cubes to the minced meat.
- 19. Stew the vegetables until soft.
- 20. Mix the vegetable-meat mixture with the egg white.
- 21. Mix the mass with the cream.
- 22. Season the filling with salt.
- 23. Season the filling with pepper.
- 24. Dust a work surface with flour.
- 25. Take two-thirds of the dough.
- 26. Roll out the dough thinly.
- 27. Cut out circles with a diameter of approx. 8 to 9 cm.
- 28. Butter small pie molds.
- 29. Place the dough circles into the molds.
- 30. Form a crust edge from the dough.
- 31. Distribute the minced meat mixture in the molds.
- 32. Roll out the remaining dough thinly.
- 33. Cut out circles with a diameter of approx. 6 cm.
- 34. Place the dough circles as lids on the pies.
- 35. Press the edges firmly together.
- 36. Etch a pattern into the lids with a sharp knife.
- 37. Brush the pies with egg yolk.
- 38. Bake the pies in the preheated oven for approx. 30 minutes until golden brown.
- 39. Remove the pies from the oven.
- 40. Carefully turn the pies out of the molds.
- 41. Serve the pies immediately.
