  2. 2. Add the butter in small pieces and the water to the flour.
  3. 3. Knead the ingredients quickly into a smooth dough.
  4. 4. Roll out the dough thinly on a lightly floured surface.
  5. 5. Line the greased tartlet molds (approx. 6 cm diameter) with the dough.
  6. 6. Press the dough firmly against the edges of the molds.
  7. 7. Prick the dough base several times with a fork.
  8. 8. Place the molds in the refrigerator for about one hour.
  9. 9. Dice the Alpine cheese for the filling into small cubes.
  10. 10. Rinse the plums and remove the pits.
  11. 11. Cut the plums into thin slices.
  12. 12. Distribute the Alpine cheese evenly over the dough base.
  13. 13. Whisk the milk with the eggs in a bowl.
  14. 14. Season the milk-egg mixture with salt and pepper.
  15. 15. Pour the liquid over the cheese.
  16. 16. Place the plum slices on top of the quiche.
  17. 17. Preheat the oven to 200 degrees (convection: 180 degrees, gas: level 3-4).
  18. 18. Bake the tarts in the oven for 25 to 30 minutes.
