🍽️ Mini Meatball Skewers with Tomato Cream

Ingredients
- 250 g Salsiccia (raw)
- 250 g ground pork
- 1 egg
- 2 tbsp breadcrumbs
- salt
- pepper (from the mill)
- 2 tbsp vegetable oil
- 60 g dried tomatoes (in oil)
- 200 g cream cheese
- 1 tsp lemon juice
- 2 tbsp pistachio kernels
- 1 box garden cress
- 1 handful radicchio
- 1 focaccia
Instructions
- 1. Squeeze the Salsiccia sausage out of its casing.
- 2. Mix the meat with the ground meat, the egg, and the breadcrumb crumbs.
- 3. Season the mixture with salt and pepper.
- 4. Form about 12 small meatballs from the mixture.
- 5. Heat oil in a frying pan.
- 6. Fry the meatballs on both sides for about 8 minutes until golden brown.
- 7. Let the tomatoes drain well.
- 8. Puree the tomatoes finely with the cream cheese, the lemon juice, and the pistachios.
- 9. Adjust the tomato cream with salt and pepper to taste.
- 10. Cut off the stems of the cress.
- 11. Wash the radicchio.
- 12. Remove the hard cores from the radicchio.
- 13. Shake the radicchio dry.
- 14. Tear the radicchio into small pieces.
- 15. Split the focaccia horizontally into two halves.
- 16. Cut the bread halves into about 12 cubes.
- 17. Spread the tomato cream onto the bottom bread halves.
- 18. Place one mini meatball on each bread half.
- 19. Add the salad with the cress on top.
- 20. Place the top bread halves on top as lids.
- 21. Secure the bites with wooden skewers.
- 22. Serve the skewers.
