🍽️ Mini Mushroom Muffins

Ingredients
- soft butter (for the baking tray)
- 1 onion
- 1 clove garlic
- 400 g mushrooms
- 2 tbsp butter
- 2 tbsp freshly chopped parsley
- salt
- pepper
- 8 eggs
- 50 ml whipping cream
- 50 g freshly grated parmesan
Instructions
- 1. Turn on the oven to 180 degrees Celsius fan-forced.
- 2. Grease the cups in your muffin tin generously with butter.
- 3. Peel the onion and the garlic.
- 4. Finely chop the onion and the garlic.
- 5. Clean the mushrooms.
- 6. Slice the mushrooms.
- 7. Sauté the onion and the garlic in the hot butter briefly until they are translucent.
- 8. Add the mushrooms.
- 9. Let everything cook together for about 5 minutes until the rising liquid has evaporated.
- 10. Remove the pan from the heat.
- 11. Stir in the parsley.
- 12. Season the mixture with salt and pepper.
- 13. Whisk the eggs with the cream and the Parmesan.
- 14. Fold the mushroom mixture into the egg-cream mixture.
- 15. Fill the mass into the prepared cups.
- 16. Bake the muffins in the oven for about 15 minutes until golden brown.
