🍰 Small Apple Raspberry Cobbler

Ingredients
- 75 g flour
- 40 g ground almond kernels (peeled)
- 0.5 tsp baking powder
- 40 g sugar
- 1 pinch salt
- 40 g butter
- 3 tbsp whipping cream
- 2 apples
- 250 g raspberries
- 2 tbsp vanilla sugar
- 2 tbsp lemon juice
Instructions
- 1. Mix flour, ground almonds, baking powder, sugar, and salt in a bowl.
- 2. Cut the butter into small pieces and add it to the flour mixture.
- 3. Work the butter into the flour with your fingers until crumbly bits form.
- 4. Stir in the cream quickly until a slightly sticky dough forms.
- 5. Preheat the oven to 180 degrees Celsius fan-forced.
- 6. Peel the apples and cut them into quarters.
- 7. Remove the core from the apple quarters.
- 8. Cut the cored apple quarters into thin slices.
- 9. Pick over the raspberries and remove any bad berries.
- 10. Mix the apple slices, raspberries, vanilla sugar, and lemon juice in a bowl.
- 11. Divide the fruit mixture among four small baking ramekins.
- 12. Tear the dough into small pieces and distribute them over the fruit filling.
- 13. Bake the cobblers for about 25 minutes in the oven until golden brown.
- 14. Serve the cobblers with vanilla sauce if desired.
