  1. 1. Crumble the yeast into a small bowl.
  2. 2. Stir the yeast smoothly with 3 to 4 tablespoons of lukewarm water.
  3. 3. Put the flour into a large bowl.
  4. 4. Add the yeast mixture, sugar, salt, oil, and about 120 milliliters of lukewarm water to the flour.
  5. 5. Knead everything into a smooth dough that no longer sticks to the bowl.
  6. 6. If necessary, work in a little more flour.
  7. 7. Cover the bowl and let the dough rise in a warm place for about 1 hour.
  8. 8. Wait until the dough volume has doubled.
  9. 9. Wash the apples thoroughly.
  10. 10. Quarter the apples and remove the core.
  11. 11. Cut the apple quarters into thin slices.
  12. 12. Put the apple slices into a bowl.
  13. 13. Mix the apples with the honey and lemon juice.
  14. 14. Clean the leek and wash it.
  15. 15. Cut the leek into thin rings.
  16. 16. Heat 1 tablespoon of oil in a frying pan.
  17. 17. Sweat the leek rings in it for 2 to 3 minutes until they are colorless.
  18. 18. Remove the pan from the heat.
  19. 19. Season the leek with salt and pepper.
  20. 20. Preheat the oven to 220 degrees Celsius fan.
  21. 21. Line two baking sheets with baking paper.
  22. 22. Work the dough well again on a floured surface.
  23. 23. Roll out the dough to a thickness of 4 to 5 millimeters.
  24. 24. Cut or stamp out circles with a diameter of about 15 centimeters.

  31. 31. Season the pizzas again with salt and pepper.
  32. 32. Drizzle them with the remaining oil.
  33. 33. Bake the pizzas in the oven for about 15 minutes until golden brown.
  34. 34. Take the pizzas out of the oven.
  35. 35. Garnish them with basil and serve.
