Ingredients
- 600 g lentils
- 400 g potatoes
- 2 bunch soup greens
- 30 g butter
- 1 l vegetable broth
- 0.5 bunch parsley
- 2 tbsp vinegar
- 2 broth sausages
Instructions
- 1. Place the lentils in a bowl.
- 2. Rinse them under cold water.
- 3. Let the water drain off completely.
- 4. Wash the potatoes thoroughly.
- 5. Peel the potatoes.
- 6. Cut the potatoes into small cubes.
- 7. Clean the soup vegetables.
- 8. Wash the vegetables.
- 9. Peel the vegetables if necessary.
- 10. Cut the vegetables into cubes as well.
- 11. Heat the butter in a pot.
- 12. Add the potato cubes and vegetables to the pot.
- 13. Sauté the vegetables briefly.
- 14. Add the drained lentils.
- 15. Pour the broth over the ingredients.
- 16. Cover the pot.
- 17. Simmer the stew over low heat.
- 18. Simmer for about 40 minutes.
- 19. Slice the sausages.
- 20. Add the sausage slices to the stew.
- 21. Warm the sausages in the stew.
- 22. Season with salt.
- 23. Season with pepper.
- 24. Season with vinegar.
- 25. Wash the parsley.
- 26. Shake the parsley dry.
- 27. Chop the parsley coarsely.
- 28. Garnish the stew with the parsley.
- 29. Serve the stew.
