🥗 The Classic Caesar Salad

Ingredients
- 2 slices white bread
- 100 ml olive oil
- 1 clove garlic
- 1 lemon
- 50 g parmesan
- 2 tbsp white wine vinegar
- 0.5 tsp hot mustard
- 1 tsp Worcestershire sauce
- 1 egg yolk
- salt
- pepper
- 1 pinch sugar
- 250 g leaf lettuce (e.g. romaine)
Instructions
- 1. Cut off the hard crust from the white bread.
- 2. Cut the remaining bread core into small cubes.
- 3. Heat two tablespoons of oil in a pan.
- 4. Fry the bread cubes for two to three minutes until golden brown and crispy.
- 5. Place the fried bread on a kitchen towel to absorb excess oil.
- 6. Peel the garlic clove.
- 7. Squeeze the lemon to obtain juice.
- 8. Add ten grams of grated Parmesan to a mixing cup.
- 9. Add one teaspoon of lemon juice to the mixing cup.
- 10. Add the garlic to the mixing cup.
- 11. Add vinegar to the mixing cup.
- 12. Add mustard to the mixing cup.
- 13. Add Worcestershire sauce to the mixing cup.
- 14. Add the egg yolk to the mixing cup.
- 15. Blend the ingredients while slowly adding the remaining oil.
- 16. Continue blending until a white, creamy sauce forms.
- 17. Add a little water if necessary.
- 18. Season the sauce with salt to taste.
- 19. Season the sauce with pepper to taste.
- 20. Season the sauce with sugar to taste.
- 21. Wash the lettuce.
- 22. Remove the tough stems from the lettuce.
- 23. Spin the lettuce dry.
- 24. Tear the lettuce leaves into bite-sized pieces.
- 25. Arrange the lettuce on plates.
- 26. Drizzle the salad with the dressing sauce.
- 27. Shave the remaining Parmesan over the salad.
- 28. Garnish the salad with the crispy bread cubes.
