🍽️ The Perfect Apple Strudel

Ingredients
- 250 g flour
- 1 pinch salt
- 4 tbsp oil
- 1.5 kg tart apples (e.g. Boskop)
- 5 tbsp raisins
- 70 g sugar
- 0.5 tsp cinnamon powder
- 100 g whipping cream
- 60 g breadcrumbs
- 80 g chopped walnut kernels
- 70 g butter
- 3 tbsp milk
- flour (for the work surface)
- butter (for the baking sheet)
- powdered sugar (for dusting)
Instructions
- 1. Put the flour and salt into a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Pour 3 tablespoons of oil and 125 milliliters of lukewarm water into the well.
- 4. Knead everything into a smooth and elastic dough.
- 5. Shape the dough into a ball.
- 6. Brush the ball with a little of the remaining oil.
- 7. Wrap the dough ball in cling film.
- 8. Let the dough rest at room temperature for about 30 minutes.
- 9. Peel the apples and cut them into quarters.
- 10. Remove the core from the apple quarters.
- 11. Slice the apples thinly across the grain.
- 12. Mix the apple slices with raisins, sugar, cinnamon, and cream.
- 13. Melt the butter in a saucepan.
- 14. Roll out the dough thinly on a floured cloth.
- 15. Carefully stretch the dough over your knuckles until it is paper-thin.
- 16. Brush the dough with the melted butter.
- 17. Sprinkle breadcrumbs over the dough.
- 18. Distribute the apple mixture evenly over the dough.
- 19. Sprinkle the nuts over the apple filling.
- 20. Roll up the strudel tightly using the cloth.
- 21. Place the strudel seam-side down on a buttered baking sheet.
- 22. Brush the surface of the strudel with milk.
- 23. Preheat the oven to 200 degrees.
- 24. Bake the strudel for about 40 minutes in the center of the oven.
- 25. Take the strudel out of the oven and let it cool down briefly.
- 26. Dust the finished strudel with powdered sugar.
- 27. Slice the strudel.
- 28. Serve the strudel with whipped cream.
