🍰 Classic Apple Cake – Smarter

Ingredients
- 500 g spelt whole wheat flour
- 250 ml milk (1.5% fat)
- 1 cube yeast
- 55 g honey
- 100 g yogurt butter (room temperature)
- salt
- 1 small lemon
- 1200 g large apples (6 large apples)
- 50 g coconut blossom sugar
- 3 tsp cinnamon
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Warm the milk in a saucepan.
- 4. Mix the yeast with one teaspoon of honey and about half of the lukewarm milk.
- 5. Pour the yeast mixture into the well.
- 6. Lightly mix the yeast with some flour from the well using a fork.
- 7. Dust the surface of the yeast mixture with a little flour.
- 8. Cover the bowl with a cloth.
- 9. Let the dough rise at room temperature for about 30 minutes.
- 10. Cut the soft butter into small flakes.
- 11. Distribute the butter flakes, 50 grams of honey, and a pinch of salt around the edge of the flour.
- 12. Pour in the remaining milk.
- 13. Knead everything into a smooth, pliable dough using the dough hooks of a hand mixer.
- 14. Cover the dough with a damp kitchen towel.
- 15. Let the dough rise until it has approximately doubled in size.
- 16. This takes between 45 and 70 minutes depending on the room temperature.
- 17. Squeeze the lemon.
- 18. Wash the apples.
- 19. Quarter the apples.
- 20. Core the apples.
- 21. Peel the apples.
- 22. Cut the apples into wedges.
- 23. Place the apple wedges in a bowl.
- 24. Mix the apples with the lemon juice.
- 25. Knead the dough briefly by hand.
- 26. Dust the work surface with a little flour.
- 27. Roll out the dough with a rolling pin to the size of a baking sheet.
- 28. Line the baking sheet with baking paper.
- 29. Place the dough on the sheet.
- 30. Distribute the apple wedges evenly over the dough.
- 31. Mix the coconut blossom sugar with cinnamon.
- 32. Sprinkle the cake with the sugar mixture.
- 33. Let the cake rise for another 20 minutes.
- 34. Preheat the oven.
- 35. Set the oven to 200 degrees Celsius conventional heat.
- 36. Use 180 degrees Celsius for fan-assisted baking.
- 37. Use gas mark 3.
- 38. Place the sheet on the middle rack.
- 39. Bake the cake for 35 to 40 minutes.
- 40. Let the cake cool down.
- 41. Cut the cake into 20 pieces.
- 42. Serve the cake.
