  1. 1. Peel the onions and slice them into thin half rings.
  2. 2. Peel the garlic and chop it finely.
  3. 3. Wash the thyme, shake it dry, and pluck the leaves from the stems.
  4. 4. Heat the butter in a pot.
  5. 5. Sauté the onions and garlic until they turn lightly brown.
  6. 6. Deglaze the mixture with the white wine.
  7. 7. Pour in the broth.
  8. 8. Add the bay leaf and thyme leaves.
  9. 9. Simmer the soup uncovered on low heat for 15 to 20 minutes.
  10. 10. Grate the cheese in the meantime.
  11. 11. Preheat the oven grill.
  12. 12. Season the soup with salt and pepper to taste.
  13. 13. Remove the bay leaf from the soup.
  14. 14. Fill the soup into ovenproof bowls.
  15. 15. Top the soup with the cheese and sprinkle some cumin over it.
  16. 16. Gratiné the soup under the preheated grill until golden brown.
