  1. 1. Peel the onion and garlic and chop them roughly.
  2. 2. Wash the tomatoes, halve them, remove the core, and cut them into large cubes.
  3. 3. Thoroughly wash and clean the mussels.
  4. 4. Discard any mussels that are already open.
  5. 5. Wash the prawns and squid and cut them into small pieces.
  6. 6. Heat 5 tablespoons of olive oil in a pan.
  7. 7. Sauté the chopped onion in it until it becomes translucent.
  8. 8. Add the chopped garlic and sauté it briefly.
  9. 9. Pour in 1/2 liter of broth.
  10. 10. Let the mixture simmer uncovered for 10 minutes.
  11. 11. Add the mussels to the broth to cook them.
  12. 12. Remove any mussels that remain closed after cooking.
  13. 13. Lift the cooked mussels out of the broth and set them aside.
  14. 14. Heat the remaining olive oil in a large paella pan.
  15. 15. Stir in the rice and toast it briefly.
  16. 16. Dissolve the saffron in a few spoonfuls of hot broth.
  17. 17. Add the saffron broth, the remaining broth, and the onion mixture to the rice.
  18. 18. Bring everything to a boil.
  19. 19. Let the rice simmer for about 25 minutes.
  20. 20. Halve the bell pepper, remove the core, and wash it.
  21. 21. Cut the bell pepper into cubes.
  22. 22. Stir the bell pepper cubes, tomatoes, peas, prawns, and squid into the rice.
  23. 23. Preheat the oven to 200 °C (convection 180 °C or gas mark 3).
  24. 24. Bake the paella covered in the oven for about 20 minutes.
  25. 25. Mix in the reserved mussels 5 minutes before the end of the baking time.
  26. 26. Season the paella with salt and pepper to taste.
  27. 27. Let the paella warm up again in the pan.
  28. 28. Wash the parsley and shake it dry.
  29. 29. Finely chop the parsley.
  30. 30. Serve the seafood paella sprinkled with fresh parsley.
