Ingredients
- 150 g dark chocolate couverture (cocoa content 65%)
- 150 g milk chocolate couverture (cocoa content 35%)
- 100 ml whipping cream (min. 30% fat content)
- 20 ml rum
- 100 g marzipan raw mass
- 50 pieces butter cookies
- 250 g dark chocolate couverture (cocoa content 65%)
- 50 g white chocolate
Instructions
- 1. Roughly chop the chocolate coating.
- 2. Heat the cream with the rum in a small saucepan until it is almost boiling.
- 3. Remove the pan from the heat and add the chopped coating.
- 4. Let the mixture sit for a short time until the chocolate softens.
- 5. Stir with a whisk until a smooth ganache forms.
- 6. Crumble the marzipan base with your fingers.
- 7. Fold the marzipan crumbs into the chocolate cream.
- 8. Place the bowl in the refrigerator.
- 9. Let the filling set for at least 3 hours.
- 10. Line a shallow dish (approx. 30 x 15 cm) with cling film.
- 11. Whip the chilled cream briefly with a whisk.
- 12. Take one third of the cream and spread it on the bottom of the dish.
- 13. Place a layer of butter biscuits on the cream.
- 14. Continue this process until you have three layers of biscuits in the dish.
- 15. Finish the assembly with a fourth layer of biscuits.
- 16. Place the dish in the refrigerator for another hour.
- 17. Chop the dark chocolate coating and the white chocolate separately.
- 18. Melt the dark chocolate coating in a bain-marie (water bath).
- 19. Melt the white chocolate separately in a bain-marie (water bath).
- 20. Lift the cake block out of the dish using the cling film.
- 21. Cut the block into even cubes.
- 22. Pour the melted dark chocolate coating over the domino squares.
- 23. Decorate the still wet squares as desired with the white chocolate.
- 24. Let the chocolate dry well in the air.
