Ingredients
- 175 g Butter
- 150 g Sugar
- 4 Eggs
- 1 untreated lime (juice and zest)
- 175 g Flour
- 40 g ground almond kernels (peeled)
- 0.5 tsp Baking powder
- 250 g soft butter
- 100 g Sugar
- 1 Vanilla pod (seeds)
- 250 g Cream cheese
- 250 g Powdered sugar
- edible flowers (e.g. pansies and sunflower)
- Powdered sugar (for dusting)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Line the cups of a cupcake or muffin tray with paper liners.
- 3. Beat the butter with the sugar until fluffy.
- 4. Whisk the eggs with the lime juice and lime zest.
- 5. Add the egg-lime mixture along with the flour, almonds, and baking powder to the butter mixture.
- 6. Stir everything well until a homogeneous dough forms.
- 7. Fill the mixture into the prepared liners.
- 8. Bake the cupcakes for about 25 minutes until golden brown in the oven.
- 9. Remove the cupcakes from the oven and let them cool completely.
- 10. For the cream, beat the butter with the sugar and vanilla seeds until creamy.
- 11. Fold the cream cheese into the butter-sugar mixture.
- 12. Stir in enough powdered sugar until the cream is pipeable.
- 13. Fill the cream into a piping bag fitted with a star tip.
- 14. Pipe the cream onto the cooled cupcakes.
- 15. Garnish the cupcakes with edible flowers as desired.
- 16. Finally, dust the cupcakes with powdered sugar.
