🍰 Clear broth with homemade tortellini

Ingredients
- 500 ground beef (lean)
- 8 tomatoes
- 2 tbsp tomato paste
- 2 egg whites
- 1 l beef broth
- 300 g flour
- 3 eggs
- 2 egg yolks
- 200 g mushrooms
- 2 onions
- 1 garlic clove
- 1 butter
- 125 ml whipping cream
- 2 tbsp parsley (finely chopped)
- salt
- pepper (from the mill)
- 2 mushrooms
- basil
Instructions
- 1. Mix all ingredients for the pasta dough in a bowl.
- 2. Knead the mixture into a smooth dough until it holds together.
- 3. If the dough is too dry, knead in a little water.
- 4. Shape the dough into a ball.
- 5. Cover the dough ball and let it rest for about 20 minutes.
- 6. Finely chop the meat for the broth.
- 7. Dice the tomatoes.
- 8. Mix the minced meat, tomatoes, tomato paste, and egg whites in a pot.
- 9. Pour the broth over the meat mixture.
- 10. Slowly bring the mixture to a boil.
- 11. Let the broth steep for about 60 minutes.
- 12. Strain the broth through a fine cloth to clarify it.
- 13. Clean the mushrooms for the filling.
- 14. Finely chop the mushrooms.
- 15. Peel the onion.
- 16. Peel the garlic.
- 17. Finely chop the onion and garlic.
- 18. Sauté the mushrooms, onions, and garlic in the butter.
- 19. Pour the cream into the pan.
- 20. Let the sauce reduce until thick.
- 21. Stir in the chopped parsley.
- 22. Season the filling with salt and pepper.
- 23. Dust the work surface with flour.
- 24. Roll out the pasta dough thinly (about 2 millimeters).
- 25. Cut the dough into squares with 5-centimeter sides.
- 26. Place a hazelnut-sized portion of filling in the center of each square.
- 27. Fold the square into a triangle.
- 28. Press the two outer points of the triangle together over a finger.
- 29. Fold the remaining point over and pull it over the finger to close the tortellini shape.
- 30. Cook the tortellini in the clear broth for about 4 minutes.
- 31. Let the pasta cook until al dente (firm to the bite).
- 32. Slice fresh mushrooms for the garnish.
- 33. Serve the tortellini with the mushroom slices and basil.
