🍰 Fresh Kiwi Sorbet

Ingredients
- 400 g kiwi fruit flesh
- 100 g sugar
- 1 lemon (juice and grated zest)
- 20 ml kiwi liqueur
- 125 ml white wine
- 1 egg white
- sliced kiwi (and cocktail cherries for decoration)
- cocktail skewer
- 2 tbsp whipped cream
- lemon balm leaf
Instructions
- 1. Puree the kiwi fruit flesh and pass the mixture through a fine sieve to remove seeds and fibers.
- 2. Mix the sugar with five tablespoons of water and boil the mixture until it reaches a syrupy consistency. Then let the syrup cool down completely.
- 3. Stir the cooled syrup thoroughly with the kiwi puree, the juice and fine zest of the lemon, the liqueur, and the wine.
- 4. Whip the egg whites until stiff and gently fold them into the ice cream mixture. Pour the mass into a shallow metal bowl and let it freeze in a freezer unit while stirring occasionally, or use an ice cream maker to finish the ice cream.
- 5. Shape the finished sorbet into nice balls using an ice cream scoop and distribute them onto the dessert glasses. Add a dollop of whipped cream on top and garnish with lemon balm leaves and a small skewer of kiwi and cocktail cherries.
