  1. 1. Puree the kiwi fruit flesh and pass the mixture through a fine sieve to remove seeds and fibers.
  2. 2. Mix the sugar with five tablespoons of water and boil the mixture until it reaches a syrupy consistency. Then let the syrup cool down completely.
  3. 3. Stir the cooled syrup thoroughly with the kiwi puree, the juice and fine zest of the lemon, the liqueur, and the wine.
  4. 4. Whip the egg whites until stiff and gently fold them into the ice cream mixture. Pour the mass into a shallow metal bowl and let it freeze in a freezer unit while stirring occasionally, or use an ice cream maker to finish the ice cream.
  5. 5. Shape the finished sorbet into nice balls using an ice cream scoop and distribute them onto the dessert glasses. Add a dollop of whipped cream on top and garnish with lemon balm leaves and a small skewer of kiwi and cocktail cherries.
