🍰 Cherry Strudel with Quark Filling

Ingredients
- 250 g flour
- 3 tbsp oil
- 1 tbsp sugar
- 1 egg (size M)
- 1 pinch salt
- flour (for the work surface)
- 250 g low-fat quark
- peel and juice of ½ untreated lemons
- vanilla pudding powder
- 1 packet vanilla sugar
- 2 tbsp sugar
- 100 g ladyfingers
- cinnamon
- 1 jar sour cherries
- 2 tbsp butter
- 1 tbsp powdered sugar
Instructions
- 1. Mix flour, oil, sugar, egg, salt, and 5 tablespoons of water using the dough hooks of your hand mixer.
- 2. Then knead the dough until smooth using your hands.
- 3. Shape the dough into a ball and wrap it in cling film.
- 4. Let the dough rest at room temperature for 30 minutes.
- 5. Stir the quark with lemon zest, lemon juice, pudding powder, vanilla sugar, and sugar.
- 6. Crumble the ladyfinger biscuits and mix them with cinnamon.
- 7. Drain the cherries.
- 8. Preheat the oven to 200 degrees (Gas: Level 4, Fan: 180 degrees).
- 9. Melt the butter.
- 10. Roll out the strudel dough thinly on a lightly floured tea towel.
- 11. Stretch the dough thinly over the back of your hands.
- 12. Brush the dough with 1 tablespoon of the melted butter.
- 13. Spread the quark mixture smoothly over the dough.
- 14. Sprinkle the quark mixture with the ladyfinger biscuit crumbs.
- 15. Distribute the cherries evenly on top.
- 16. Lift the towel and roll the strudel up tightly.
- 17. Place the strudel seam-side down on a baking sheet lined with baking paper.
- 18. Press the ends of the strudel together firmly.
- 19. Brush the remaining dough with the rest of the butter.
- 20. Bake the strudel in the oven for approx. 45 minutes.
- 21. Serve the strudel while still warm.
