🍽️ Crunchy Cherry Pastries

Ingredients
- 130 g Butter
- 60 g ground almond kernels
- 4 egg whites
- 120 g powdered sugar
- 2 tbsp liquid honey
- 20 ml kirsch
- 60 g flour
- 25 pitted cherries (halved)
Instructions
- 1. Heat the butter in a pot until it turns golden brown.
- 2. Let the brown butter cool down completely.
- 3. Lightly beat the egg whites with the powdered sugar until combined.
- 4. Stir the remaining ingredients into the egg white mixture.
- 5. Place the dough mixture in the refrigerator for about 15 minutes.
- 6. Check the consistency: The dough should be creamy to firm.
- 7. Grease the molds with the cooled brown butter.
- 8. Lightly dust the greased molds with flour.
- 9. Fill the molds halfway with the dough mixture.
- 10. Place the cherries on top of the dough in the molds.
- 11. Preheat the oven to 200 degrees Celsius.
- 12. Bake the pastries in the preheated oven for about 20 minutes.
- 13. Remove the molds from the oven and let them rest briefly inside.
- 14. Turn the pastries out of the molds onto a plate.
- 15. Dust the finished pastries with powdered sugar.
- 16. Serve the pastries with cherries dipped in melted white chocolate, as desired.
