  1. 1. Heat 225 milliliters of milk in a pot until it is lukewarm. Remove the pot from the heat. Crumble 1 piece of fresh yeast into the warm milk. Add 1 tablespoon of sugar and stir everything well. Let the mixture rest for 10 minutes. Mix whole wheat flour and 250 grams of spelt flour with a pinch of salt in a large bowl. Add 100 grams of butter, 1 egg, and the milk-yeast mixture. Knead everything into a smooth dough. Cover the bowl and let the dough rise in a warm place for 1 hour.
  2. 2. Slice a vanilla pod lengthwise. Scrape the seeds out of the pod with a knife. Stir cream powder (pudding powder) with 3 tablespoons of milk and one egg yolk until smooth. Boil the remaining milk together with 45 grams of sugar and the vanilla seeds. Remove the milk from the heat. Pour 2/3 of the hot milk over the cream powder mixture and stir. Sieve this mixture back into the remaining milk. Bring the entire mixture back to a boil while stirring constantly. Let it simmer for 1 minute. Remove the pot from the heat and let the pudding cool down. Wash the cherries and remove the pits.
  3. 3. Knead the yeast dough on a floured work surface again. Add a little more flour if necessary. Roll the dough out to the size of a baking tray to a thickness of about 1 centimeter. Place the dough on a baking tray lined with baking paper. Press a border up around the edges. Cover the dough and let it rise for another 15 minutes.
  4. 4. Mix the remaining flour with the remaining sugar, a pinch of salt, and the remaining butter. Rub the butter into the mixture with your hands to create crumbles. Stir sour cream into the cooled pudding. Spread the pudding and sour cream mixture evenly over the yeast dough.
  5. 5. Distribute the pitted cherries evenly over the pudding. Sprinkle the crumbles over the top. Bake the cake in a preheated oven at 180 degrees Celsius (convection: 160 degrees Celsius; gas: level 2 to 3) for approx. 40 minutes. Remove the cake from the oven. Let it cool down slightly. Cut the cake into pieces and serve.
