🍰 French-style Cherry Cake

Ingredients
- 5 Eggs
- 40 g Raw cane sugar
- 1 Pinch Vanilla powder
- 45 g Whole wheat flour
- 45 g Flour (Type 1050)
- 1 Pinch Salt
- 1 tsp. Baking powder
- 100 g Low-fat quark
- 75 ml Milk (1.5% fat)
- 750 g Sweet cherries
Instructions
- 1. Beat the eggs, sugar, and vanilla powder with a hand mixer until creamy.
- 2. Mix the whole grain flour, 30 grams of fine flour (Type 1050), a pinch of salt, and the baking powder in a separate bowl.
- 3. Stir the low-fat quark and the milk into the flour mixture.
- 4. Gently fold the beaten egg mixture into the batter.
- 5. Wash the cherries, halve them, and remove the pits.
- 6. Dry the cherries well.
- 7. Toss the cherries with the remaining fine flour (Type 1050) so they do not sink in the batter.
- 8. Grease the baking pan or the portion molds if necessary.
- 9. Distribute half of the batter into the molds.
- 10. Add half of the cherries on top of the batter.
- 11. Pour the remaining batter over it and smooth it out.
- 12. Sprinkle the remaining cherries on top.
- 13. Preheat the oven to 200°C (180°C with fan or Gas Mark 3).
- 14. Bake the cake for about 30 minutes until golden brown.
- 15. Serve the cake lukewarm.
