  1. 1. Thoroughly wash the cherries under running water.
  2. 2. Remove the stems from the cherries.
  3. 3. Pit the cherries and place the fruit flesh in a bowl.
  4. 4. Slice the vanilla pod lengthwise.
  5. 5. Scrape out the tiny vanilla seeds from the pod using a knife.
  6. 6. Add the vanilla paste, the empty pod, the cherry juice, and the cane sugar to a pot.
  7. 7. Bring the mixture in the pot to a boil.
  8. 8. Add the pitted cherries to the boiling liquid.
  9. 9. Let the compote simmer over medium heat for 5 to 6 minutes.
  10. 10. Whisk the cornstarch with 2 tablespoons of cold water in a small container until no lumps remain.
  11. 11. Add the dissolved starch to the cherry compote in the pot.
  12. 12. Stir constantly and cook the compote for another 1 to 2 minutes.
  13. 13. Wash the fresh tarragon under cold water.
  14. 14. Shake the tarragon dry to remove excess water.
  15. 15. Pluck the small leaves from the tarragon stems.
  16. 16. Stir the tarragon leaves into the warm cherry compote.
  17. 17. Whip the cream stiffly using a hand mixer with the whisk attachments.
  18. 18. Stir the yogurt smooth in a separate bowl.
  19. 19. Gently fold the whipped cream into the yogurt.
  20. 20. Serve the compote lukewarm together with the yogurt-cream mixture.
