🍰 Fruity Cherry Compote with Tarragon

Ingredients
- 750 g sour cherries
- 1 vanilla pod
- 400 ml sour cherry juice
- 60 g cane sugar (3 tbsp)
- 2 tsp cornstarch
- 4 sprigs tarragon
- 75 ml whipping cream
- 200 g yogurt (1.5% fat)
Instructions
- 1. Thoroughly wash the cherries under running water.
- 2. Remove the stems from the cherries.
- 3. Pit the cherries and place the fruit flesh in a bowl.
- 4. Slice the vanilla pod lengthwise.
- 5. Scrape out the tiny vanilla seeds from the pod using a knife.
- 6. Add the vanilla paste, the empty pod, the cherry juice, and the cane sugar to a pot.
- 7. Bring the mixture in the pot to a boil.
- 8. Add the pitted cherries to the boiling liquid.
- 9. Let the compote simmer over medium heat for 5 to 6 minutes.
- 10. Whisk the cornstarch with 2 tablespoons of cold water in a small container until no lumps remain.
- 11. Add the dissolved starch to the cherry compote in the pot.
- 12. Stir constantly and cook the compote for another 1 to 2 minutes.
- 13. Wash the fresh tarragon under cold water.
- 14. Shake the tarragon dry to remove excess water.
- 15. Pluck the small leaves from the tarragon stems.
- 16. Stir the tarragon leaves into the warm cherry compote.
- 17. Whip the cream stiffly using a hand mixer with the whisk attachments.
- 18. Stir the yogurt smooth in a separate bowl.
- 19. Gently fold the whipped cream into the yogurt.
- 20. Serve the compote lukewarm together with the yogurt-cream mixture.
