🍰 Lime and Cherry Muffins

Ingredients
- 150 g cherries (fresh or from the jar)
- 1 lime (alternatively 1/2 untreated lemon)
- oil (for greasing)
- 200 g wheat flour Type 1050
- 2 tsp baking powder
- 150 g soft butter
- 150 g sugar
- 1 packet vanilla sugar
- 1 egg
- 100 g kefir
- powdered sugar (for dusting)
- 24 paper baking molds
Instructions
- 1. Turn on your oven to 175 degrees.
- 2. Wash the fresh cherries and remove the pits.
- 3. Let the cherries from the jar drain well.
- 4. Rinse the lime under hot water and dry it.
- 5. Grate the lime zest finely.
- 6. Squeeze out the juice of the lime.
- 7. Place two paper liners inside each other.
- 8. Mix the flour with the baking powder.
- 9. Beat the butter with the sugar, vanilla sugar, and egg until creamy.
- 10. Fold the lime zest into the butter mixture.
- 11. Fold 2 tablespoons of lime juice into the butter mixture.
- 12. Fold the kefir into the butter mixture.
- 13. Add the flour mixture.
- 14. Mix the ingredients quickly.
- 15. Gently fold in the cherries.
- 16. Fill the paper liners two-thirds full.
- 17. Bake the muffins in the oven for 20 to 25 minutes until golden brown.
- 18. Brush the muffins with the remaining lime juice.
- 19. Let the muffins cool briefly.
- 20. Let the muffins cool completely.
- 21. Dust them lightly with powdered sugar before serving.
