🍰 Cherry Almond Cake

Ingredients
- 5 g Butter (1 tsp)
- 5 Eggs
- 75 g Coconut blossom sugar
- 120 g Spelt wholemeal flour
- Salt
- 1 pinch Baking powder
- 150 g Low-fat quark
- 100 ml Milk (3.5% fat)
- 750 g Sweet cherries
- 20 g Almond flakes (2 tbsp)
Instructions
- 1. Grease four round baking dishes (each 15 cm in diameter) with butter.
- 2. Beat the eggs together with the sugar until frothy.
- 3. Add 100 grams of flour, a pinch of salt, baking powder, quark (a type of fresh cheese), and milk to the egg mixture.
- 4. Stir the ingredients well until you have a smooth batter.
- 5. Wash the cherries and remove the pits.
- 6. Let the cherries drain well.
- 7. Toss the cherries gently with the remaining flour.
- 8. Fill half of the batter into the prepared dishes.
- 9. Distribute half of the cherries evenly over the batter.
- 10. Add the remaining batter on top and smooth it out.
- 11. Sprinkle the remaining cherries over the cake.
- 12. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
- 13. Bake the cakes for 20 to 25 minutes until golden brown.
- 14. Sprinkle flaked almonds over the cakes.
- 15. Bake them for an additional 10 minutes.
- 16. Remove the cakes from the oven.
- 17. Serve them immediately.
