🍽️ Festive Yeast Dumplings

Ingredients
- 0.5 cube fresh yeast (21 g)
- 2 tbsp sugar
- 0.25 l lukewarm milk
- 500 g flour
- 2 eggs
- 1 pinch salt
- 1 tsp grated lemon zest
- 200 g clarified butter
- flour (for the work surface)
Instructions
- 1. Crumble the yeast into a small cup.
- 2. Stir the yeast with one teaspoon of sugar and three tablespoons of lukewarm milk.
- 3. Sift the flour into a large bowl.
- 4. Make a well in the center of the flour.
- 5. Pour the yeast milk into the well.
- 6. Dust some flour over the yeast.
- 7. Let the bowl stand covered for 15 minutes.
- 8. Stir in the remaining milk, sugar, eggs, salt, and lemon zest.
- 9. Knead the mixture into a smooth dough.
- 10. Let the dough rise covered for one hour.
- 11. Dust the work surface with flour.
- 12. Form 12 small balls from the dough.
- 13. Cover the balls with a kitchen towel.
- 14. Let the balls rise for another 10 minutes.
- 15. Heat the ghee in a wide, heavy pan.
- 16. Flatten the dough balls.
- 17. Stretch the center of the balls thinly.
- 18. Ensure the edges remain as thick rims.
- 19. Place the Kirchweihnudels into the hot ghee in batches.
- 20. Pour one tablespoon of hot fat over the edges.
- 21. Turn the noodles once.
- 22. Bake the noodles golden brown on both sides.
- 23. Let the noodles drain well on a cake rack.
- 24. Dust the noodles with powdered sugar as desired.
- 25. Serve the noodles.
