🍽️ Smoked Herring and Cucumber Spread

Ingredients
- 4 Kipper fillets (cold-smoked salted herring fillets without head)
- 2 spring onions
- 0.5 cucumber
- 80 g soft butter
- 1 tbsp chive rings
- pepper (from the mill)
- nutmeg (freshly grated)
- lemon juice
Instructions
- 1. Pour boiling water over the fish fillets in a bowl.
- 2. Let the fillets steep in the hot water for about 4 minutes.
- 3. Drain the water and let the fish cool down.
- 4. Wash the spring onions and trim the ends.
- 5. Finely chop the spring onions.
- 6. Halve the cucumber and scoop out the seeds.
- 7. Dice the cucumber flesh finely.
- 8. Remove the skin from the cooled fish fillets.
- 9. Flake the fish meat finely using a fork.
- 10. Mix the fish meat with the soft butter.
- 11. Fold in the diced cucumber and chopped spring onions into the fish-butter mixture.
- 12. Chop the chives and stir them in as well.
- 13. Season the spread with pepper, nutmeg, and lemon juice to taste.
- 14. Serve the spread on bread.
