  1. 1. Pour boiling water over the fish fillets in a bowl.
  2. 2. Let the fillets steep in the hot water for about 4 minutes.
  3. 3. Drain the water and let the fish cool down.
  4. 4. Wash the spring onions and trim the ends.
  5. 5. Finely chop the spring onions.
  6. 6. Halve the cucumber and scoop out the seeds.
  7. 7. Dice the cucumber flesh finely.
  8. 8. Remove the skin from the cooled fish fillets.
  9. 9. Flake the fish meat finely using a fork.
  10. 10. Mix the fish meat with the soft butter.
  11. 11. Fold in the diced cucumber and chopped spring onions into the fish-butter mixture.
  12. 12. Chop the chives and stir them in as well.
  13. 13. Season the spread with pepper, nutmeg, and lemon juice to taste.
  14. 14. Serve the spread on bread.
