🍰 Keto Chia Pudding with Papaya

Ingredients
- 350 ml unsweetened almond drink (almond milk)
- 1 tsp vanilla powder
- 60 g chia seeds
- 1 tbsp ground almonds
- 300 g small papaya (1 small papaya)
- 1 tbsp lemon juice
- 2 tbsp flaxseed oil
- 30 g walnut kernels
Instructions
- 1. Pour the almond drink into a large bowl.
- 2. Add the vanilla, chia seeds, and almonds.
- 3. Stir the ingredients well until combined.
- 4. Let the mixture swell for about 20 minutes.
- 5. Stir the mixture again after the waiting period.
- 6. Divide the chia pudding evenly among four glasses.
- 7. Cover the glasses.
- 8. Place the glasses in the refrigerator for 12 hours.
- 9. It is best to chill them overnight.
- 10. Remove the core of the papaya the next day.
- 11. Cut the papaya flesh into bite-sized pieces.
- 12. Add the lemon juice and flaxseed oil to the papaya.
- 13. Mix the papaya with the dressing.
- 14. Let the papaya mixture marinate for about 10 minutes.
- 15. Roughly chop the walnuts in the meantime.
- 16. Place the papaya mixture on top of the cold chia pudding in the glasses.
- 17. Sprinkle the chopped walnuts over the dessert.
