🍽️ Homemade Tomato Ketchup

Ingredients
- 800 g tomatoes
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 2 tbsp olive oil
- 4 allspice berries
- 1 bay leaf
- 1 clove
- 2 sprigs parsley
- 1 sprig lovage
- 4 tbsp brown sugar
- 1 tsp mustard powder
- 100 ml wine vinegar
- salt
- cayenne pepper
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Remove the hard stem area from the tomatoes.
- 3. Cut the tomato flesh into small cubes.
- 4. Peel the onion.
- 5. Peel the garlic clove.
- 6. Cut the onion into small cubes.
- 7. Cut the garlic into small cubes.
- 8. Wash the bell pepper.
- 9. Halve the bell pepper.
- 10. Remove the inside with the seeds.
- 11. Cut the bell pepper into small cubes.
- 12. Heat oil in a pot.
- 13. Add the onion, garlic, and pepper to the hot oil.
- 14. Sauté the vegetables briefly.
- 15. Add allspice berries, bay leaves, and cloves.
- 16. Sauté the spices briefly.
- 17. Add the cubed tomatoes to the pot.
- 18. Let the mixture simmer for about 15 minutes.
- 19. Add the fresh herbs.
- 20. Add the sugar.
- 21. Add the mustard powder.
- 22. Add the vinegar.
- 23. Stir everything well.
- 24. Let the mixture simmer for another 10 to 15 minutes until it is thick.
- 25. Strain the mixture through a fine sieve.
- 26. Bring the clarified liquid to a boil again.
- 27. Season with salt.
- 28. Season with cayenne pepper.
- 29. Fill the ketchup into a clean bottle.
- 30. Seal the bottle tightly.
- 31. Let the ketchup cool down.
