  1. 1. Wash the tomatoes thoroughly.
  2. 2. Remove the hard stem ends from the tomatoes.
  3. 3. Cut the tomatoes into small pieces.
  4. 4. Also wash the plums thoroughly.
  5. 5. Halve the plums.
  6. 6. Remove the pits from the plum halves.
  7. 7. Place the tomato pieces and the plums into a large pot.
  8. 8. Add all other ingredients for the ketchup.
  9. 9. Stir everything well to combine.
  10. 10. Bring the mixture to a boil while stirring constantly.
  11. 11. Reduce the heat to a low setting.
  12. 12. Let the ketchup simmer gently on low heat for approx. 45 minutes.
  13. 13. Stir occasionally during this time.
  14. 14. Pour the cooked mixture through a fine mesh sieve into a clean pot.
  15. 15. Continue to reduce the liquid that passed through the sieve until it becomes thick.
  16. 16. Fill the hot ketchup immediately into clean bottles.
  17. 17. Seal the bottles tightly.
