Ingredients
- 800 g mixed berries (e.g. blackberries, raspberries, red currants, blueberries, etc.)
- 3 onions
- vegetable oil
- 6 tbsp sugar
- 1 star anise
- 2 allspice berries
- 1 bay leaf
- 2 cloves
- 160 ml white wine vinegar
- 1 tsp mustard powder
- salt
Instructions
- 1. Wash the berries thoroughly and remove stems or unripe spots.
- 2. Peel the onions and chop them very finely.
- 3. Heat 2 tablespoons of oil in a pot.
- 4. Sauté the onions over medium heat until they are soft and translucent (sweating until glassy).
- 5. Add the berries, sugar, and spices from the bag.
- 6. Stir the ingredients briefly.
- 7. Deglaze the mixture with the vinegar.
- 8. Let the mixture simmer over medium heat for about 25 minutes.
- 9. Remove the spice bag.
- 10. Puree the fruit mixture finely using a hand blender.
- 11. Pass the puree through a fine sieve to remove seeds and fibers.

- 13. Pour the finished ketchup into a clean bottle.
- 14. Seal the bottle tightly.
