🍽️ Homemade Ketchup Made from Beetroot

Ingredients
- 300 g beetroot
- 1 red onion
- 1 clove of garlic
- 30 ml olive oil
- 1 tbsp brown sugar
- 3 tbsp balsamic vinegar
- 30 g tomato paste
- salt
- 1 pinch wasabi powder
Instructions
- 1. Wash the beetroot thoroughly.
- 2. Place the beetroot in boiling water and cook it for about 45 minutes.
- 3. Check the cooking time by piercing the beetroot with a fork; it should be soft.
- 4. Meanwhile, peel the onion and the garlic.
- 5. Cut the onion and garlic into small cubes.
- 6. Heat the olive oil in a pot.
- 7. Sauté the onions and garlic in the oil until they become translucent.
- 8. Add the sugar and let it caramelize slightly.
- 9. Deglaze the mixture with the vinegar.
- 10. Remove the pot from the heat.
- 11. Drain the cooking water from the beetroot.
- 12. Peel the still hot beetroot.
- 13. Cut the peeled beetroot into small pieces.
- 14. Put the beetroot, the onion-garlic mixture, and the tomato paste into the blender.
- 15. Blend the ingredients until smooth and thick.
- 16. Season the ketchup with salt and wasabi.
- 17. Heat the mixture until it is just about to boil.
- 18. Pour the hot ketchup into a bottle.
- 19. Seal the bottle tightly.
