  1. 1. Wash the beetroot thoroughly.
  2. 2. Place the beetroot in boiling water and cook it for about 45 minutes.
  3. 3. Check the cooking time by piercing the beetroot with a fork; it should be soft.
  4. 4. Meanwhile, peel the onion and the garlic.
  5. 5. Cut the onion and garlic into small cubes.
  6. 6. Heat the olive oil in a pot.
  7. 7. Sauté the onions and garlic in the oil until they become translucent.
  8. 8. Add the sugar and let it caramelize slightly.
  9. 9. Deglaze the mixture with the vinegar.
  10. 10. Remove the pot from the heat.
  11. 11. Drain the cooking water from the beetroot.
  12. 12. Peel the still hot beetroot.
  13. 13. Cut the peeled beetroot into small pieces.
  14. 14. Put the beetroot, the onion-garlic mixture, and the tomato paste into the blender.
  15. 15. Blend the ingredients until smooth and thick.
  16. 16. Season the ketchup with salt and wasabi.
  17. 17. Heat the mixture until it is just about to boil.
  18. 18. Pour the hot ketchup into a bottle.
  19. 19. Seal the bottle tightly.
