🍳 Hearty Bread with Pumpkin and Seeds

Ingredients
- 1 piece Hokkaido pumpkin (approx. 300 g flesh, deseeded)
- 100 g pumpkin seeds
- 80 g honey
- 75 g butter
- 1 egg (S)
- 250 g whole wheat flour
- 250 g flour (Type 550)
- 1 packet dry yeast
- 1 tsp salt
Instructions
- 1. Cut the pumpkin into small cubes.
- 2. Place the pumpkin cubes in a pot.
- 3. Cover the pot with a lid.
- 4. Set the stove to a very low heat setting.
- 5. Steam the pumpkin for about 10 minutes until it is soft.
- 6. Take a non-stick frying pan.
- 7. Add the pumpkin seeds to the dry pan.
- 8. Roast the seeds until they are golden brown.
- 9. Remove the pot with the soft pumpkin from the stove.
- 10. Puree the pumpkin finely with a hand blender.
- 11. Let the pumpkin puree cool down briefly.
- 12. Wait until the puree is lukewarm.
- 13. Add honey to the lukewarm pumpkin mixture.
- 14. Add butter to the mixture.
- 15. Crack an egg into the mixture.
- 16. Mix everything well together.
- 17. Take a large mixing bowl.
- 18. Add both types of flour to the bowl.
- 19. Add the yeast to the bowl.
- 20. Add the salt to the bowl.
- 21. Mix the dry ingredients in the bowl.
- 22. Add the liquid pumpkin mixture to the dry ingredients.
- 23. Add the roasted pumpkin seeds to the bowl.
- 24. Take a hand mixer with dough hooks.
- 25. Knead everything into a smooth dough.
- 26. Cover the bowl with the dough.
- 27. Place the bowl in a warm spot.
- 28. Let the dough rise for at least 30 minutes.
- 29. Wait until the volume of the dough has doubled.
- 30. Take the dough out of the bowl.
- 31. Knead the dough briefly by hand.
- 32. Take a loaf pan with a length of 30 cm.
- 33. Line the pan with baking paper.
- 34. Place the dough into the prepared pan.
- 35. Let the dough in the pan rise for another 10 minutes.
- 36. Preheat the oven.
- 37. Set the oven temperature to 180 °C.
- 38. If using fan-assisted heat, set 160 °C.
- 39. If using gas, set level 2-3.
- 40. Place the pan on the middle rack.
- 41. Bake the bread for about 40 minutes.
