🍳 Hearty Quark Rolls with Herbs and Nuts

Ingredients
- 40 g dried tomatoes
- 50 g green olives (pitted)
- 2 sprigs rosemary
- 500 g wheat flour (Type 1050)
- 1 packet baking powder
- 350 g low-fat quark
- 2 eggs
- 5 tbsp rapeseed oil
- 1 tsp salt
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 tbsp flaxseeds
Instructions
- 1. Cut the tomatoes into small cubes.
- 2. Pour 100 milliliters of boiling water over the tomato cubes.
- 3. Set the bowl with the tomatoes aside until you need them later.
- 4. Chop the olives very finely using a large knife.
- 5. Wash the rosemary under running water.
- 6. Shake the rosemary dry.
- 7. Pluck the fine needles off the rosemary stems.
- 8. Chop the rosemary needles finely as well.
- 9. Put flour and baking powder into a large mixing bowl.
- 10. Mix the flour and baking powder together.
- 11. Add quark, eggs, oil, and salt to the flour mixture.
- 12. Process the ingredients into a smooth dough using the kneading hooks of a hand mixer.
- 13. If the quark is very moist, add a little more flour.
- 14. Let the soaked tomatoes drain well in a sieve.
- 15. Squeeze the tomatoes slightly to remove excess liquid.
- 16. Divide the dough into three equal parts.
- 17. Knead the tomatoes, olives, and rosemary into the first part of the dough.
- 18. Knead the remaining ingredients into the other two parts of the dough.
- 19. Moisten your hands with a little flour.
- 20. Shape six small balls from the first part of the dough.
- 21. Shape six more balls from the second part of the dough.
- 22. Shape the final six balls from the third part of the dough.
- 23. Put pumpkin seeds on a small plate.
- 24. Put sunflower seeds on a second small plate.
- 25. Put flaxseeds on a third small plate.
- 26. Press six dough balls with one side into the pumpkin seeds.
- 27. Press six more balls into the sunflower seeds.
- 28. Press the remaining balls into the flaxseeds.
- 29. Line a baking tray with baking paper.
- 30. Place the rolls close together on the tray.
- 31. Preheat the oven to 200 degrees Celsius.
- 32. If you use convection, set the oven to 180 degrees Celsius.
- 33. If you use gas, set the oven to level 3.
- 34. Slide the tray onto the middle rack.
- 35. Bake the rolls for 25 to 30 minutes.
