🍰 Lemon Cookies with Colorful Icing Decoration

Ingredients
- 200 g flour
- 50 g ground almond kernels
- 80 g powdered sugar
- 1 pinch organic lemon zest
- 1 egg
- 120 g cold butter
- flour (for working)
- 150 g powdered sugar
- 2 tbsp lemon juice
- food coloring (orange)
- pink sugar (for sprinkling)
Instructions
- 1. Mound the flour, ground almonds, powdered sugar, and lemon zest on a clean work surface.
- 2. Make a well in the center of the flour mixture.
- 3. Place the egg into the well.
- 4. Distribute the butter pieces around the edge of the flour mixture.
- 5. Roughly chop the ingredients together with a knife.
- 6. Quickly knead the mixture into a smooth dough using your hands.
- 7. Wrap the dough in cling film.
- 8. Chill the dough in the refrigerator for about 1 hour.
- 9. Preheat the oven to 180 degrees Celsius fan mode.
- 10. Line a baking tray with baking paper.
- 11. Lightly dust the work surface with flour.
- 12. Roll out the dough on a floured surface to a thickness of about 3 millimeters.
- 13. Cut out circles and squares from the dough as you like.
- 14. Place the shaped cookies on the prepared baking tray.
- 15. Bake the cookies in the center of the oven for about 12 minutes until lightly golden yellow.
- 16. Carefully remove the baked cookies from the tray.
- 17. Place the cookies on a wire cooling rack.
- 18. Let the cookies cool down completely.
- 19. Mix the powdered sugar with the lemon juice to form a thick icing.
- 20. Set aside a portion of the icing and color it.
- 21. Coat the cooled cookies with the white or colored icing.
- 22. Let the icing dry on the cookies.
- 23. Fill the remaining icing into a piping bag.
- 24. Decorate the cookies as you like using the icing from the piping bag.
- 25. Sprinkle some sugar over the decorated cookies.
- 26. Let the cookies dry completely one more time.
