  1. 1. Mound the flour, ground almonds, powdered sugar, and lemon zest on a clean work surface.
  2. 2. Make a well in the center of the flour mixture.
  3. 3. Place the egg into the well.
  4. 4. Distribute the butter pieces around the edge of the flour mixture.
  5. 5. Roughly chop the ingredients together with a knife.
  6. 6. Quickly knead the mixture into a smooth dough using your hands.
  7. 7. Wrap the dough in cling film.
  8. 8. Chill the dough in the refrigerator for about 1 hour.
  9. 9. Preheat the oven to 180 degrees Celsius fan mode.
  10. 10. Line a baking tray with baking paper.
  11. 11. Lightly dust the work surface with flour.
  12. 12. Roll out the dough on a floured surface to a thickness of about 3 millimeters.
  13. 13. Cut out circles and squares from the dough as you like.
  14. 14. Place the shaped cookies on the prepared baking tray.
  15. 15. Bake the cookies in the center of the oven for about 12 minutes until lightly golden yellow.
  16. 16. Carefully remove the baked cookies from the tray.
  17. 17. Place the cookies on a wire cooling rack.

  19. 19. Mix the powdered sugar with the lemon juice to form a thick icing.
  20. 20. Set aside a portion of the icing and color it.
  21. 21. Coat the cooled cookies with the white or colored icing.

  23. 23. Fill the remaining icing into a piping bag.
  24. 24. Decorate the cookies as you like using the icing from the piping bag.
  25. 25. Sprinkle some sugar over the decorated cookies.
