  1. 1. Preheat the oven to 200 degrees Celsius.
  2. 2. Beat butter or margarine with sugar, vanilla sugar, one egg, a pinch of salt, and lemon zest until the mixture is very frothy.
  3. 3. Sift flour and baking powder over the mixture and stir in partially.
  4. 4. Knead the remaining dough gently until a smooth dough forms.
  5. 5. Wrap the dough in foil and refrigerate for 2 hours.
  6. 6. Lightly flour the work surface and roll out the dough to a thickness of 5 millimeters.
  7. 7. Cut the dough into triangles with side lengths of about 5 centimeters using a pastry wheel.
  8. 8. Place the triangles on a baking sheet lined with baking paper, leaving some space between them.
  9. 9. Place two almond halves crosswise on each triangle and press them in gently.
  10. 10. Whisk one egg yolk with one tablespoon of water.
  11. 11. Brush the cookies with the egg yolk and water mixture.
  12. 12. Bake the cookies on the middle rack for 10 to 15 minutes until golden yellow.
  13. 13. Let the cooled cookies cool down completely on a wire rack.
  14. 14. Melt chocolate coating over a hot water bath.
  15. 15. Pour the melted chocolate over the cookies.
  16. 16. Sprinkle chopped pistachios over the wet chocolate.
  17. 17. Let the chocolate dry in the air.
