🍰 Triangular Cookies with Chocolate Glaze

Ingredients
- 150 g soft butter
- 150 g sugar
- 1 packet Bourbon vanilla sugar
- 1 egg
- 1 pinch salt
- 0.5 untreated lemon (zest)
- 300 g flour
- 0.5 tsp baking powder
- 1 egg yolk
- 50 g chopped pistachios
- 150 g dark chocolate couverture
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Beat butter or margarine with sugar, vanilla sugar, one egg, a pinch of salt, and lemon zest until the mixture is very frothy.
- 3. Sift flour and baking powder over the mixture and stir in partially.
- 4. Knead the remaining dough gently until a smooth dough forms.
- 5. Wrap the dough in foil and refrigerate for 2 hours.
- 6. Lightly flour the work surface and roll out the dough to a thickness of 5 millimeters.
- 7. Cut the dough into triangles with side lengths of about 5 centimeters using a pastry wheel.
- 8. Place the triangles on a baking sheet lined with baking paper, leaving some space between them.
- 9. Place two almond halves crosswise on each triangle and press them in gently.
- 10. Whisk one egg yolk with one tablespoon of water.
- 11. Brush the cookies with the egg yolk and water mixture.
- 12. Bake the cookies on the middle rack for 10 to 15 minutes until golden yellow.
- 13. Let the cooled cookies cool down completely on a wire rack.
- 14. Melt chocolate coating over a hot water bath.
- 15. Pour the melted chocolate over the cookies.
- 16. Sprinkle chopped pistachios over the wet chocolate.
- 17. Let the chocolate dry in the air.
