🍰 Cream-filled Sandwich Cookies

Ingredients
- 450 g flour
- 120 g cornstarch
- 3 tsp baking powder
- 3 eggs (size L)
- 2 egg yolks
- 300 g sugar
- 2 tbsp vanilla sugar
- 220 g soft butter
- flour (for working)
- 80 g coconut flakes
- 50 g butter
- 250 g sugar
- 1 tbsp vanilla sugar
- 1 pinch salt
- 200 ml whipping cream
- 250 ml milk
Instructions
- 1. Mix flour, starch, and baking powder in a bowl.
- 2. Beat eggs, egg yolks, sugar, vanilla sugar, and butter until creamy using a hand mixer.
- 3. Stir in the flour mixture gradually until a smooth dough forms.
- 4. Wrap the dough in foil and let it rest in the refrigerator for about one hour.
- 5. Melt the butter in a tall pot or a non-stick pan.
- 6. Add sugar, vanilla sugar, and salt, and let the mixture caramelize briefly.
- 7. Stir in the cream and milk until the caramel has completely dissolved.
- 8. Let the cream simmer at medium heat for about 45 minutes.
- 9. Stir at least every five minutes until the cream is thick.
- 10. The filling is ready when it drips thickly from the spoon.
- 11. Preheat the oven to 180 degrees Celsius with fan setting.
- 12. Divide the dough into four to five portions.
- 13. Put the unused dough portions back in the refrigerator.
- 14. Roll out each dough portion on a well-floured surface.
- 15. Roll the dough to a thickness of about four millimeters.
- 16. Cut out cookies with a diameter of four to five centimeters.
- 17. Place the cookies on baking sheets lined with parchment paper.
- 18. Put the baking sheets into the oven one after the other.
- 19. Bake the cookies for about ten minutes until they are lightly golden yellow.
- 20. Remove the cookies from the oven.
- 21. Let the cookies cool completely on a wire rack.
- 22. Spread half to one tablespoon of the cream onto half of the cooled cookies.
- 23. Place a second cookie on top to form a sandwich.
- 24. Press the cookies slightly so that a little cream comes out at the edges.
- 25. Roll the edges of the cookies in coconut flakes.
- 26. Enjoy the cookies immediately or store them airtight in the refrigerator.
