  1. 1. Mix flour, starch, and baking powder in a bowl.
  2. 2. Beat eggs, egg yolks, sugar, vanilla sugar, and butter until creamy using a hand mixer.
  3. 3. Stir in the flour mixture gradually until a smooth dough forms.
  4. 4. Wrap the dough in foil and let it rest in the refrigerator for about one hour.
  5. 5. Melt the butter in a tall pot or a non-stick pan.
  6. 6. Add sugar, vanilla sugar, and salt, and let the mixture caramelize briefly.
  7. 7. Stir in the cream and milk until the caramel has completely dissolved.
  8. 8. Let the cream simmer at medium heat for about 45 minutes.
  9. 9. Stir at least every five minutes until the cream is thick.
  10. 10. The filling is ready when it drips thickly from the spoon.
  11. 11. Preheat the oven to 180 degrees Celsius with fan setting.
  12. 12. Divide the dough into four to five portions.
  13. 13. Put the unused dough portions back in the refrigerator.
  14. 14. Roll out each dough portion on a well-floured surface.
  15. 15. Roll the dough to a thickness of about four millimeters.
  16. 16. Cut out cookies with a diameter of four to five centimeters.
  17. 17. Place the cookies on baking sheets lined with parchment paper.
  18. 18. Put the baking sheets into the oven one after the other.
  19. 19. Bake the cookies for about ten minutes until they are lightly golden yellow.

  22. 22. Spread half to one tablespoon of the cream onto half of the cooled cookies.
  23. 23. Place a second cookie on top to form a sandwich.
  24. 24. Press the cookies slightly so that a little cream comes out at the edges.
  25. 25. Roll the edges of the cookies in coconut flakes.
