🍰 Crispy Cranberry Cookies with Lemon Zest

Ingredients
- 250 g flour
- 125 g powdered sugar
- 1 tsp lemon zest
- 1 pinch vanilla bean paste
- 1 egg
- 150 g cold butter
- 95 g cranberries (dried)
- 80 g walnut kernels (chopped)
- powdered sugar (for dusting)
Instructions
- 1. Place flour, powdered sugar, lemon zest, and vanilla paste on a clean work surface.
- 2. Make a well in the center of the flour mixture and place the egg inside.
- 3. Distribute the chopped butter around the egg.
- 4. Knead everything together into a firm dough.
- 5. Wrap the dough in plastic wrap.
- 6. Place the dough in the refrigerator for 1 hour.
- 7. Preheat your oven to 180 degrees Celsius with fan setting.
- 8. Lightly dust your work surface with flour.
- 9. Roll out the dough on the floured surface to a thickness of 3 to 4 millimeters.
- 10. Cut out small cookies from the dough using a cookie cutter.
- 11. Mix the cranberries and nuts in a small bowl.
- 12. Distribute the cranberry-nut mixture evenly over the cookies.
- 13. Place the cookies on a baking sheet lined with baking paper.
- 14. Bake the cookies in the center of the oven for about 10 minutes until lightly golden yellow.
- 15. Remove the cookies from the oven and let them cool completely.
- 16. Finally, dust the cooled cookies with a little powdered sugar.
