  1. 1. Whip the cream until stiff using a hand mixer.
  2. 2. Squeeze half a lemon and catch the juice.
  3. 3. Fold in a small pinch of salt and cayenne pepper.
  4. 4. Whip the cream again briefly if needed.
  5. 5. Wash the chives and shake them dry.
  6. 6. Cut the chives into very fine rings.
  7. 7. Carefully cut off the top quarter of the eggshells.
  8. 8. Place the egg yolks into a bowl.
  9. 9. Add the lemon juice.
  10. 10. Season with a pinch of salt and cayenne pepper each.
  11. 11. Whisk the mixture with a fork or whisk.
  12. 12. Rinse the eggshells thoroughly under very hot water.
  13. 13. Place the shells into egg cups.
  14. 14. Melt the butter in a non-stick pan over low heat.
  15. 15. Add the egg yolks to the pan.
  16. 16. Stir constantly until the eggs set slightly and become creamy.
  17. 17. Fill the cooked egg yolks into the prepared shells.
  18. 18. Place a dollop of cream on each egg.
  19. 19. Add a teaspoon of caviar on top.
  20. 20. Sprinkle with chives and serve the dish.
