🍽️ Kaviar Eggs

Ingredients
- 100 ml whipping cream (15 % fat)
- 1 small piece lemon
- salt
- cayenne pepper
- 0.25 bunch chives
- 4 eggs (L)
- 20 g butter
- 4 tsp caviar
Instructions
- 1. Whip the cream until stiff using a hand mixer.
- 2. Squeeze half a lemon and catch the juice.
- 3. Fold in a small pinch of salt and cayenne pepper.
- 4. Whip the cream again briefly if needed.
- 5. Wash the chives and shake them dry.
- 6. Cut the chives into very fine rings.
- 7. Carefully cut off the top quarter of the eggshells.
- 8. Place the egg yolks into a bowl.
- 9. Add the lemon juice.
- 10. Season with a pinch of salt and cayenne pepper each.
- 11. Whisk the mixture with a fork or whisk.
- 12. Rinse the eggshells thoroughly under very hot water.
- 13. Place the shells into egg cups.
- 14. Melt the butter in a non-stick pan over low heat.
- 15. Add the egg yolks to the pan.
- 16. Stir constantly until the eggs set slightly and become creamy.
- 17. Fill the cooked egg yolks into the prepared shells.
- 18. Place a dollop of cream on each egg.
- 19. Add a teaspoon of caviar on top.
- 20. Sprinkle with chives and serve the dish.
