🍽️ Caviar Blinis

Ingredients
- 100 g wheat flour
- 100 g buckwheat flour
- 15 g fresh yeast
- 0.5 tsp sugar
- 3 tbsp lukewarm water
- 30 g butter
- 200 ml milk
- 0.5 tsp salt
- 2 eggs (separated)
- oil (for frying)
- ghee (for frying)
- 200 g crème fraîche
- salt
- 1 pinch sugar
- 0.5 tsp horseradish
- lemon zest (to taste)
- 100 g trout caviar
- 2 sprigs fresh dill
Instructions
- 1. Put the flours into a bowl.
- 2. Make a well in the center of the flour.
- 3. Crumble the yeast into the well.
- 4. Sprinkle the yeast with sugar.
- 5. Mix the yeast with a little water to form a thick batter.
- 6. Cover the bowl.
- 7. Let the dough rest for about 10 minutes.
- 8. Wait until the dough starts to bubble.
- 9. Melt the butter.
- 10. Warm the milk until lukewarm.
- 11. Add the butter to the dough.
- 12. Add the salt to the dough.
- 13. Add the egg yolks to the dough.
- 14. Mix everything well.
- 15. Gradually add milk.
- 16. Stir until you have a very thick, creamy batter.
- 17. Let the dough rise for another 20 minutes.
- 18. Meanwhile, beat the egg whites until stiff.
- 19. Gently fold the egg whites into the dough.
- 20. Heat some oil in a pan.
- 21. Heat some clarified butter in the pan.
- 22. Take small portions of dough with a spoon.
- 23. Place them in the hot pan.
- 24. Fry the blinis for about 2 minutes on each side until golden brown.
- 25. Place the finished blinis on a kitchen towel.
- 26. To absorb excess fat.
- 27. Season the crème fraîche with salt.
- 28. Season the crème fraîche with sugar.
- 29. Season the crème fraîche with horseradish.
- 30. Add a little lemon zest to taste.
- 31. Spread one teaspoon of the cream onto each blini.
- 32. Place one teaspoon of caviar on top of each blini as well.
- 33. Arrange the blinis on a plate.
- 34. Garnish them with small sprigs of dill.
