🍽️ Smart Kaviar Blinis

Ingredients
- 15 g fresh yeast
- 1 tsp sugar
- 100 ml milk (1.5% fat)
- 150 g flour
- 50 g buckwheat flour
- 2 egg yolks
- 2 eggs
- salt
- 8 quail eggs
- 1 red onion
- 0.5 lemon
- 150 g yogurt (0.1% fat) (firm)
- pepper
- 4 tbsp oil (neutral flavor)
- 8 tsp caviar
- chives (to taste)
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Add the sugar and the lukewarm milk.
- 3. Stir the mixture until smooth.
- 4. Add the flour.
- 5. Mix everything into a smooth pre-dough.
- 6. Let the dough rise for about 20 minutes in a warm place, covered.
- 7. Separate 2 eggs.
- 8. Use the egg whites for something else.
- 9. Add the buckwheat flour, the whole eggs, and the egg yolks to the dough.
- 10. Add a pinch of salt.
- 11. Whisk everything into a thick batter.
- 12. Let the batter rise for another 30 minutes, covered.
- 13. Place the quail eggs in a small pot.
- 14. Cover the eggs with water.
- 15. Bring the water to a boil, covered.
- 16. Boil the eggs for 5 minutes until hard-boiled.
- 17. Drain the water.
- 18. Rinse the eggs with cold water to stop the cooking.
- 19. Peel the quail eggs.
- 20. Peel the onion.
- 21. Slice or grate the onion into very fine rings.
- 22. Squeeze the lemon.
- 23. Stir the yogurt until smooth.
- 24. Season the yogurt with salt and pepper.
- 25. Add 1 tablespoon of lemon juice to the yogurt.
- 26. Add oil to a pan in portions.
- 27. Heat the oil over medium heat.
- 28. Fry 16 small golden-brown pancakes from the batter one by one.
- 29. Turn the pancakes once.
- 30. Let the blinis drain on kitchen paper.
- 31. Halve the quail eggs.
- 32. Place the blinis on a plate.
- 33. Add a little caviar to each blini.
- 34. Place a few onion rings on top.
- 35. Place the egg halves on top.
- 36. Add some yogurt sauce.
- 37. Wash the chives.
- 38. Dry the chives with a cloth.
- 39. Cut the chives into fine rings.
- 40. Garnish the blinis with the chives.
- 41. Serve the blinis immediately.
