  5. 5. Mix everything into a smooth pre-dough.
  6. 6. Let the dough rise for about 20 minutes in a warm place, covered.
  7. 7. Separate 2 eggs.
  8. 8. Use the egg whites for something else.
  9. 9. Add the buckwheat flour, the whole eggs, and the egg yolks to the dough.
  10. 10. Add a pinch of salt.
  11. 11. Whisk everything into a thick batter.
  12. 12. Let the batter rise for another 30 minutes, covered.
  13. 13. Place the quail eggs in a small pot.
  14. 14. Cover the eggs with water.
  15. 15. Bring the water to a boil, covered.
  16. 16. Boil the eggs for 5 minutes until hard-boiled.
  17. 17. Drain the water.
  18. 18. Rinse the eggs with cold water to stop the cooking.
  19. 19. Peel the quail eggs.
  20. 20. Peel the onion.
  21. 21. Slice or grate the onion into very fine rings.
  22. 22. Squeeze the lemon.
  23. 23. Stir the yogurt until smooth.
  24. 24. Season the yogurt with salt and pepper.
  25. 25. Add 1 tablespoon of lemon juice to the yogurt.
  26. 26. Add oil to a pan in portions.

  28. 28. Fry 16 small golden-brown pancakes from the batter one by one.

  33. 33. Add a little caviar to each blini.
  34. 34. Place a few onion rings on top.

  36. 36. Add some yogurt sauce.
  37. 37. Wash the chives.
  38. 38. Dry the chives with a cloth.
  39. 39. Cut the chives into fine rings.
  40. 40. Garnish the blinis with the chives.
  41. 41. Serve the blinis immediately.
