  1. 1. Score the chestnuts crosswise with a sharp knife.
  2. 2. Place the chestnuts in boiling salted water and cook them for 15 minutes.
  3. 3. Whip half of the cream stiffly with vanilla sugar.
  4. 4. Place the whipped cream in the refrigerator for later use.
  5. 5. Drain the cooked chestnuts.
  6. 6. Peel the chestnuts while they are still warm.
  7. 7. Peel the apple and remove the core.
  8. 8. Cut the apple into small cubes.
  9. 9. Place the chestnut flesh, apple cubes, remaining cream, and sugar in a pot.
  10. 10. Let the mixture simmer for 10 minutes.
  11. 11. Allow the mixture to cool down briefly.
  12. 12. Puree the mixture until smooth using a blender or hand mixer.
  13. 13. Gently fold the previously whipped cream into the puree.
  14. 14. Mix the raisins into the cream.
  15. 15. Spoon the cream into individual dessert bowls.
  16. 16. Sprinkle pine nuts over the dessert.
  17. 17. Serve the dish immediately.
