🍽️ Grilled Kassler with fruity apricot dip

Ingredients
- 4 slices Kassler (160 g each)
- Olive oil
- 1 clove garlic
- 4 spring onions
- 8 ripe apricots
- 1 unwaxed lime
- Salt
- Pepper (from the mill)
- 1 pinch sugar
Instructions
- 1. Preheat your grill to high heat.
- 2. Rinse the meat under running water.
- 3. Pat the meat completely dry with a kitchen towel.
- 4. Season the meat generously with black pepper.
- 5. Brush the meat thinly with some oil.
- 6. Place the meat on the hot grill grate.
- 7. Grill the meat for about 4 minutes on each side.
- 8. Peel the garlic clove and chop it finely.
- 9. Rinse the spring onions under cold water.
- 10. Remove the dry ends of the spring onions.
- 11. Slice the spring onions into thin rings.
- 12. Pour boiling water over the apricots.
- 13. Shock the apricots immediately with cold water.
- 14. Peel the skin off the apricots.
- 15. Halve the apricots and remove the pits.
- 16. Cut the apricots into small cubes.
- 17. Wash the lime with hot water and dry it.
- 18. Grate the fine zest of the lime.
- 19. Squeeze the juice out of the lime.
- 20. Add the apricot cubes to a bowl.
- 21. Mix the apricots briefly with the lime juice.
- 22. Fold the lime zest into the apricots.
- 23. Season the mixture with salt, pepper, and sugar.
- 24. Place the apricot mixture on the slices of grilled meat.
- 25. Serve the dish immediately.
