  1. 1. Preheat your grill to high heat.
  2. 2. Rinse the meat under running water.
  3. 3. Pat the meat completely dry with a kitchen towel.
  4. 4. Season the meat generously with black pepper.
  5. 5. Brush the meat thinly with some oil.
  6. 6. Place the meat on the hot grill grate.
  7. 7. Grill the meat for about 4 minutes on each side.
  8. 8. Peel the garlic clove and chop it finely.
  9. 9. Rinse the spring onions under cold water.
  10. 10. Remove the dry ends of the spring onions.
  11. 11. Slice the spring onions into thin rings.
  12. 12. Pour boiling water over the apricots.
  13. 13. Shock the apricots immediately with cold water.
  14. 14. Peel the skin off the apricots.
  15. 15. Halve the apricots and remove the pits.
  16. 16. Cut the apricots into small cubes.
  17. 17. Wash the lime with hot water and dry it.
  18. 18. Grate the fine zest of the lime.
  19. 19. Squeeze the juice out of the lime.
  20. 20. Add the apricot cubes to a bowl.
  21. 21. Mix the apricots briefly with the lime juice.
  22. 22. Fold the lime zest into the apricots.
  23. 23. Season the mixture with salt, pepper, and sugar.
  24. 24. Place the apricot mixture on the slices of grilled meat.
  25. 25. Serve the dish immediately.
